I found this great recipe in Detoxinista when I was looking for inspiration for flourless healthy muffins recipe. And these are just amazing! Just a few ingredients, easy to make, flourless, refined sugar-free, dairy-free, low carb, high in protein – all the good things. And it is made with zucchini, but you cannot tell that – these taste even better than regular ones. So you can tell yourself that with this treat you are also having a portion of your veggies 🙂 In the original recipe, healthy muffins were made with chocolate nibs, but I didn’t add them, as I didn’t have them at the moment and it turned out great. So you can add sugar-free chocolate nibs if you prefer.

Flourless zucchini healthy muffins recipe

Ingredients

 

150 g shredded zucchini

150 g  almond butter (or nut butter of choice)

30 g coconut sugar

3 teaspoons good quality cacao powder

2  free range eggs

1 teaspoon baking soda, 1 teaspoon apple cider vinegar

1/4 teaspoon salt

1 teaspoon vanilla extract

100 g dark chocolate chips (optional)

 

Preparation

 

 

Preheat the oven to 180º C and prepare muffin tin for approx. 12 cups (I use reusable silicone muffin cups)

 

Squeeze the shredded between hands to remove excess moisture. Transfer the squeezed zucchini into a large bowl.

 

Add in the almond butter, coconut sugar, cocoa powder, eggs, baking soda (mix with vinegar), salt, and vanilla. Stir well until a thick batter is formed, then fold in the chocolate chips, if using.

 

Divide the batter among the 12 baking cups, and top with a few additional chocolate chips, if desired. Bake at 180ºC about 20 minutes.

 

Remove the pan from the oven and let them cool for at least 20 minutes before serving. You can serve them warm or cold.
