I think that food without spices is just food not to starve, and with a few natural herbs or a homemade pesto, it becomes a piece of art! I always try to eat quality food and to choose good ingredients, so worst thing to do is to add cheap mass production spice mixes. It makes all the food taste the same and that is not what we want. To create unique amazing recipes and tastes in our kitchen, let’s create spices ourselves! It’s very easy and fun!
One of my favorite spices is fresh basil and the most common sauce I use in my kitchen is homemade pesto. I like it fresh and ones you can get from the stores don’t come even close to this amazing DIY from scratch pesto! It’s super easy and quick to make and the taste is just amazing. Homemade pesto can help you to make a lot of amazing dishes – you can add it to pasta, veggies, chicken, meat or use it as a spread.
Try to make this homemade pesto DIY from scratch – you will be amazed, how amazing it is! And if there is some left, you can save it for later two ways: put it in a jar and add some oil on top (I will stay fresh up to two weeks), or you can freeze it in the ice trays (it will stay fresh up to one year).
Ingredients for homemade pesto
1 bunch of fresh basil
3-4 garlic cloves
3-4 tablespoons of quality extra virgin olive oil
2 tablespoons pine nuts
2 tablespoons finely grated aged cheese (like Parmigiano) (Optional)
Add basil, peeled garlic, nuts and olive oil to the food processor and blend until finely chopped. Scrape down the sides of the bowl few times.
Grate finely the cheese and add to the basil mix. (except for vegan version)
You homemade pesto is ready!
If you have some left, put it in a jar and add some oil on top (it will stay fresh up to two weeks), or you can freeze it in the ice trays. When frozen, remove from the trays and keep in a bag or box in a freezer (it will stay fresh up to one year).
