Asparagus soup – real spring flavor!

Asparagus soup has a real spring flavor! It’s a pity that asparagus season is so short. So it’s a must to cook delicious foods!

Asparagus may be a great side dish and be the main course as well. They are a great for snacks and healthy pizzas, and can be used for soups and stews. Asparagus has a unique combination of anti-inflammatory substances that has a positive effect on nerve cells, anti-inflammatory and anti-cancer properties. Eating asparagus improves blood pressure, regulates blood sugar, helps to control cholesterol. Because of this, it is really worth waiting for the spring’s and early summer’s asparagus harvest and to enjoy healthy tasty dishes until mid June.  This tasty asparagus soup is a little different than the usual dishes with this vegetable.

Serve this asparagus soup with sour cream or vegetable cream. You can also roast some nuts and seeds on top or serve it with chilli olive oil.

Bring 1 liter of water to a boil.

Set aside one third of asparagus.

Rinse the rest, cut off the hard stalks. Slice into several parts.

Peel the potato, cut into chunks.

Cut small zucchini into large chunks. Cut the celery stem into several parts.

Peel the small onion and cut it into small pieces.

Transfer all vegetables into boiling water. Put a vegetable broth or salt, pepper and other favorite soup spices. Cook until the vegetables are tender.

Using food processor, puree  all the vegetables. Put them back on a small heat.

Put a tablespoon of rice or other flour (you can use ground quinoa or millet as well). Stir well. Bring to a boil on a low heat, wait few minutes for the soup to thicken.

Cut the remaining asparagus into small pieces and transfer into the pot, boil for a few minutes. Do not overcook asparagus, it must stay crispy.

Serve asparagus soup with sour cream, vegetable cream (vegan version), for example, with rice cream.

Serve with puffed rice crackers. You can also roast some nuts or seeds on top. I’ve served my asparagus soup with whole asparagus, roasted on ghee butter.

Add fresh chopped herbs.
