Raw vegan camomile and lime cake

Well, to be honest, I am not vegan and not on a pure RAW diet. But I am open minded and love to try new things if they are healthy and beneficial. So to me, RAW desserts always sounded mysterious. Cake with no flour of any kind, no dairy? Until I tried RAW vegan desserts. I’m so glad I did! Absolutely unexpected goodness and guilt free! I tried to create something myself and here it is – for your judgment – my cashew camomile – lime cake. All vegan and raw, tasty, nutritious and healthy!

Ingredients:

 

For the small cake, serves 5-6

Base:

1 tablespoon coconut flour

2 tablespoons melted coconut oil

2 tablespoons pumpkin seed flour (or ground seeds)

1 tablespoon cashew butter

1 tablespoon coconut sugar or honey

 

Cashew topping:

200 g cashews

Strong camomile tea

Sweetener to taste (stevia, honey or coconut sugar)

1 lime peel

 

Lime topping:

200 ml water

3 lime juice

Sweetener to taste (stevia, xylitol, coconut sugar, honey)

2 teaspoons agar agar

1/2 teaspoon matcha powder (optional, gives green color)

 

Preparation

 

Soak the cashews in cold water for at least 4 hours and up to 12. To soak, just place the cashews in a bowl and cover with water, leave at room temperature up to 4 hours, and put in the refrigerator if soaking overnight.

Combine all the ingredients for the base.

Place a sheet of parchment paper on the bottom of the cake pan.  Using the spoon or your fingers, push the dough around the form, forming the base.

Put the form in the fridge while you are preparing the toppings.

Prepare cashew filling: drain the soaked cashews and put into the food processor. Prepare very strong camomile tea (20 ml) and grate lime peel. Add all the ingredients to the food processor and combine until smooth and creamy.  Put on the top of the refrigerated cake’s base.

Prepare the lime topping: mix the agar agar powder in the cold water and heat up constantly mixing until fully dissolves. Take off from heat. Add sweetener, matcha powder and leave to cool a little bit. Add squeezed lime juice, mix well and pour on cake’s top.

Leave the cake in the refrigerator for few hours.
